I am experimental with my cooking, so I like recipes that have a lot of room to play. Eating NSNG, I often drop out or substitute ingredients that do not fit my lifestyle.
Starting my NSNG journey, I quickly learned of Anna Vocino (Vinnie Tortorich’s co-host on the Angriest Trainer podcast) and her website full of NSNG-friendly recipes. She suffers from celiac disease and autoimmune reactions to dairy, eggs, and sesame. I’ve tried many of her recipes and some of them are now in our normal rotation of dinner menus!

Anna recently released an amazing cookbook featuring these recipes and many more that I am so excited to try out! The best part about her book is that she encourages her readers to experiment with her recipes.
In the above tots recipe, I use 1-2 heads of cauliflower that I cut into pieces and run through our processor to get the perfect consistency for the tots. Instead of steaming pre-riced cauliflower on the stove top, I microwave the freshly processed cauliflower for about 2 minutes on HIGH. I never use red pepper and substitute ground red pepper to make them a little spicy. I experiment with the cheese I use. For the fat head pizza, I season the crust often by shaking cayenne/paprika/chili powder/garlic powder on the crust before putting in the oven to give it a cajun flavor and bake it longer to make it crispier.
Pizza is one of those things you’ll start to miss when giving up sugar and grains so the pizza recipes have been so popular – especially with kids! You may have heard of the ‘fat head’ pizza crust, featured on a film called “Fat Head”, that was adapted from a previous low carb pizza crust recipe.
